THE HEALTHY FOOD MINUTE
Edamame Salad
Ingredients: Yield: 8 servings
- 13 oz. soybeans, frozen, shelled weight
- 2 oz. red Bell Pepper, diced
- 4 oz. sweet Corn, cut from cob or frozen
- 3/4 cup Hominy, drained and rinsed
- 4 oz. tofu, diced
- 2 oz. cherry tomato, halved
- 4 Tbs. dried cranberries
- 1 Tbs. rice vinegar
- 2 tsp. soy sauce
- 2 tsp. olive oil
- 2 tsp. sugar
Method:
Combine rice vinegar, soy sauce, olive oil, sugar and whisk to combine. Set aside for later.
In a mixing bowl combine the soybeans, red pepper, corn, hominy, dried cranberries, tomatoes and tofu. Pour the reserved dressing mixture over this and toss to combine.
