Edamame Salad

Ingredients:                        Yield:  8 servings

  • 13 oz. soybeans, frozen, shelled weight
  • 2 oz. red Bell Pepper, diced
  • 4 oz. sweet Corn, cut from cob or frozen
  • 3/4 cup Hominy, drained and rinsed
  • 4 oz. tofu, diced
  • 2 oz. cherry tomato, halved
  • 4 Tbs. dried cranberries
  • 1 Tbs. rice vinegar
  • 2 tsp. soy sauce
  • 2 tsp. olive oil
  • 2 tsp. sugar

Method:

Combine rice vinegar, soy sauce, olive oil, sugar and whisk to combine. Set aside for later.

In a mixing bowl combine the soybeans, red pepper, corn, hominy, dried cranberries, tomatoes and tofu. Pour the reserved dressing mixture over this and toss to combine.
