Guinness Stout and Chicken Stew
Ingredients: Yield: 8-12 servings
2 lbs. chicken meat, diced
1 tbs. olive oil
2 cups onion, diced
1 tbs. garlic, minced
8 oz. mushrooms, sliced
1 cup chicken stock
1 ½ cup stout
1 ½ tsp. leaf thyme
1 lb. carrots, diced
2 cups peas
Salt and pepper to taste
As needed – cornstarch slurry
Method:
Heat oil in pot. Add chicken meat and sauté until just browned. Add onion, mushroom and garlic and continue to sauté until onions are soft and mushrooms start to caramelize. Deglaze with chicken stock and stout. Add carrot and thyme and bring to a simmer. Cook over low heat until carrot and chicken are tender. Season with salt and pepper to taste. Thicken to a stew consistency with a cornstarch and water mixture. Add peas at the end of the cooking process so that they maintain their color.
