Black Bean and Corn Salsa

Ingredients:                  Yield:  About 3 cups

1 cup Black Beans, canned, drained, rinsed

1 cup Corn, frozen

½ Red Bell Pepper, diced

1/3 cup Red Onion, diced

¼ cup Cilantro, chopped

1 Jalapeno Pepper, seeds removed, minced

¼ cup Lemon Juice

To Taste – Salt and Pepper 

Method:

Drain and rinse black beans. Finely dice red pepper, red onion, fresh jalapeno (seeds removed) and cilantro. Combine all ingredients and mix to incorporate. Refrigerate for up to 7 days and use as needed.
