THE HEALTHY FOOD MINUTE
Heirloom Tomato Spaghettini
Ingredients: Yield: 4 servings
- 1 Tbs. olive oil
- 1 lb. spaghetti noodles, pre-cooked, cooled
- 8 oz. heirloom garden fresh tomatoes cut in wedges
- 1 oz. sun dried tomato, julienne
- ¼ cup scallions, chopped
- 2 tsp. garlic, minced
- 1/4 cup fresh basil cut in chiffonade
- 1/4 cup white wine
- To taste – Salt and Pepper
- As Needed – parmesan cheese, shredded
Method:
Heat oil in sauté pan. Add tomato; sun dried tomato and garlic and sauté. Deglaze with white wine. Add scallions and basil. Add pre-cooked spaghetti and toss to incorporate and heat through. Season with salt and pepper. Top garnish with finely chopped parsley and shredded parmesan cheese.
