Easy Parmensan Crusted Tilapia

During the summer you don't want to be slaving over a hot stove. Most of us want something light that can be prepared quickly so we can get back outside! Even if you don't like fish, you will enjoy this reciped recommended by the leaders of the Bariatric Program at Theda Clark.

Even if you don't like fish, you will enjoy this. It is so mild. I recommend buying frozen tilapia. It is the next best thing to catching it at the ocean.

Ingredients:
6 tilapia filets (1/2 pounds)
1/2 cup grated Parmesan cheese
1 tsp. coarsely ground black pepper
1/3 cup reduced fat mayonnaise

Directions:
1. Heat oven to 425° F.
2. Place fish in a single layer on a parchment-covered baking sheet. Mix cheese and pepper until blended.
3. Spread fish with mayo; sprinkle with cheese mixture
4. Bake 8 to 10 minutes or until fish flakes easily with a fork. Makes 6 servings.
