BBQ Salmon with Pickled Onions
Ingredients: Yield: 8 servings
- 2 lbs. Salmon Fillet, skin removed
- 2 Tbs. BBQ Spice Seasoning
- 8 servings Pickled Onions, batch recipe
Method:
Season each salmon fillet generously with a favorite BBQ spice blend. Pan sear or grill salmon skin side up until golden. Turn and cook on other side to a medium doneness. Remove from heat. Top salmon with a small mound of just warmed pickled onion.
PICKLED RED ONIONS
Ingredients: Yield: 8 servings
- 6 oz. red Onion, thinly sliced
- ¼ tsp. Garlic, minced
- 4 tsp. Sugar
- ¼ cup red wine vinegar
- 1/8 tsp. kosher salt
- 1/8 tsp. black pepper
- ½ cup water
Method:
Combine ingredients in a saucepan and bring to a simmer. Simmer for 5 minutes. Remove from heat and cool, leaving onions to soak in the brine until needed for service. At service, shake off excess liquid and use onions as needed
