Bacon Wrapped Pesto Shrimp with Apple Barbecue
Ingredients: Yield: 16 pieces
- 16 Shrimp, 16/20 ct., peeled and deveined
- 8 strips of bacon
- 2 oz. pesto
- 2 oz. barbecue sauce
- 6 oz. apple cider, reduced to syrup consistency
Method:
Lay bacon strips out on sheet pan and par bake in a 350 degree oven until cooked halfway. Remove, drain on paper towels and cut in half. Combine barbecue sauce and apple reduction, set aside. Coat shrimp with pesto, wrap with bacon strips and secure with a toothpick. Brush barbeque sauce onto shrimp and bake in a 350 degree oven until shrimp are just cooked through, about 10-12 minutes.
