Ingredients
- 2 tablespoons olive oil
- 1 shallot, chopped
- 1 bunch of green onions, sliced thin
- ½ cup low-sodium garbanzo beans, drained and rinsed
- 1 bunch of multi-colored-stem swiss chard, chopped into bite-size pieces
- 2 cups of colorful cherry tomatoes, sliced in half
- ¼ teaspoon red pepper flakes
- Juice from ½ of a fresh lemon
- 1 teaspoon grated lemon zest
- ¼ cup feta cheese crumbles
- Salt and pepper to taste
Directions
- Heat olive oil in a large skillet. Stir in shallot and green onions. Cook, stirring frequently, for 3-5 minutes or until soft and fragrant.
- Stir in garbanzo beans and season with red pepper flakes. Heat through.
- Place swiss chard in the same large skillet and cook until wilted. Add tomatoes, and squeeze lemon juice over the greens.
- Add lemon zest, and stir to incorporate.
- Sprinkle feta cheese crumbles over the top. Add salt and pepper to taste.
