Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Swiss chard is similar to spinach and kale. It’s often overlooked, but it has the same qualities as the better-known greens. Chard is known for its milder taste and beautiful multi-colored stems. It grows best in cooler temperatures, so it’s often one of the earlier greens to be ready for harvest. Garbanzo beans and a sprinkle of feta cheese make this salad recipe a bit more savory. Play around with the red pepper flakes, or add some parsley for a hint of a sweet flavor. Served hot from the skillet and paired with fish or chicken, this salad makes for a beautiful dinner plate.

Ingredients

  • 2 tablespoons olive oil
  • 1 shallot, chopped
  • 1 bunch of green onions, sliced thin
  • ½ cup low-sodium garbanzo beans, drained and rinsed
  • 1 bunch of multi-colored-stem swiss chard, chopped into bite-size pieces
  • 2 cups of colorful cherry tomatoes, sliced in half
  • ¼ teaspoon red pepper flakes
  • Juice from ½ of a fresh lemon
  • 1 teaspoon grated lemon zest
  • ¼ cup feta cheese crumbles
  • Salt and pepper to taste

Directions

  1. Heat olive oil in a large skillet. Stir in shallot and green onions. Cook, stirring frequently, for 3-5 minutes or until soft and fragrant.
  2. Stir in garbanzo beans and season with red pepper flakes. Heat through.
  3. Place swiss chard in the same large skillet and cook until wilted. Add tomatoes, and squeeze lemon juice over the greens.
  4. Add lemon zest, and stir to incorporate.
  5. Sprinkle feta cheese crumbles over the top. Add salt and pepper to taste.
