Eating a fresh strawberry that was recently picked from a local farm field is like having a burst of sunshine in your mouth. The naturally sweet flavor and juice bursting out with every bite make for a delightful, healthy treat. Strawberries are the star of this recipe. They provide a great source of vitamin C and are relatively easy on your blood sugar compared to some other popular fruits. Using a small amount of honey helps create a little extra juice, and yet keeps it natural for a sweet ending to a summer meal.
Ingredients
- 2 cups fresh strawberries, hulled and quartered
- 1 tablespoon honey
- 2 small avocados, halved and pitted
- Cooking spray
- 2 tablespoons chopped fresh mint
Directions
- In a small bowl, gently stir together the strawberries and honey. Loosely cover and refrigerate for 1-4 hours, stirring occasionally to let the strawberries macerate and release their natural juices.
- When the strawberries are ready, preheat the grill to medium high.
- Lightly spray each avocado half with cooking spray. Place the avocados on the grill with the stem side facing 10 o’clock.
- Grill for 1-2 minutes. Rotate stem side to 2 o’clock and grill for an additional 1-2 minutes. Transfer the avocado halves to plates with the flesh side up.
- Mix half of the mint into the strawberry mixture. Stir and spoon over each avocado half.
- Sprinkle the remaining mint on top as a garnish.
- Garnish with additional toppings as desired. Suggestions: a few slivered almonds, a pinch of coconut, or a dusting of cinnamon or nutmeg.
