Smashed Berry and Goat Cheese Toast

This recipe is perfect for a quick breakfast or light appetizer at your next social gathering. Fresh-picked berries — rich in vitamin C and high in fiber — are mixed with just enough sugar to create a juicy liquid.  A little bit of goat cheese produces that special sweet and salty combination. Increase your fiber by choosing a whole-grain bread. Add sunflower seeds or chopped walnuts to boost the crunch. Savor this sophisticated and simple treat.

Ingredients

  • 1 ½ cups fresh blackberries
  • ½ cup fresh blueberries
  • 1 teaspoon vanilla
  • 1 ½ tablespoons sugar
  • 3 tablespoons water
  • 1-2 teaspoons cornstarch, sifted
  • 8 slices of your favorite bread
  • 4 ounces goat cheese
  • 2 tablespoons chopped fresh mint

Directions

  1. In a medium-sized sauce pan, combine the berries, vanilla, sugar, and water. Cover and cook on low. Simmer for about 5 minutes or until fruit begins to burst.
  2. Gently mash fruit with a fork, leaving a few berries partially intact. Whisk in the cornstarch until well incorporated. Cover once more and simmer on low until desired consistency. Let cool slightly.
  3. Meanwhile, toast the bread as desired.
  4. When ready, spread a thick layer of goat cheese on each slice of bread. Spoon smashed berry mixture over the cheese.
  5. Garnish with mint and serve.
