Ingredients
- 1 ½ cups fresh blackberries
- ½ cup fresh blueberries
- 1 teaspoon vanilla
- 1 ½ tablespoons sugar
- 3 tablespoons water
- 1-2 teaspoons cornstarch, sifted
- 8 slices of your favorite bread
- 4 ounces goat cheese
- 2 tablespoons chopped fresh mint
Directions
- In a medium-sized sauce pan, combine the berries, vanilla, sugar, and water. Cover and cook on low. Simmer for about 5 minutes or until fruit begins to burst.
- Gently mash fruit with a fork, leaving a few berries partially intact. Whisk in the cornstarch until well incorporated. Cover once more and simmer on low until desired consistency. Let cool slightly.
- Meanwhile, toast the bread as desired.
- When ready, spread a thick layer of goat cheese on each slice of bread. Spoon smashed berry mixture over the cheese.
- Garnish with mint and serve.
