Roasted Asparagus

When you eat in-season fruits and veggies, you get to enjoy these foods at their peak of flavor and nutritional value. Peak-season asparagus needs little adornment. Here, it’s oven roasted, tossed in olive oil and topped with salt, pepper and garlic. You can also take this recipe to the grill. Cook in a grill pan for about 6 to 8 minutes.

Ingredients

  • 1 pound asparagus (washed and trimmed)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 tablespoon minced garlic

Directions

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Place the trimmed asparagus in an even layer on a baking sheet with rimmed edges.
  3. Drizzle the olive oil on top. Sprinkle sea salt, pepper and minced garlic on top.
  4. Use your hands to evenly coat the veggies in oil and seasonings.
  5. Bake for 10 to 15 minutes, depending on the size of the asparagus.
