Red Leaf Lettuce Salad with Beets and Grapes

Beets and red leaf lettuce combine to provide a colorful salad that’s full-flavored and rich in vitamins, including folate. Folate, or vitamin B9, is an important nutrient during pregnancy. Those with gluten intolerances also may have a folate deficiency. Mixing up the color of the beets can make the salad more colorful. For those who are hesitant about beets, you’ll notice that the golden beets have a milder flavor.

Dressing

  • ¼ cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup olive oil

  • Salt/pepper to taste
  • 2 heads red leaf lettuce
  • 1 cup seedless red grapes
  • ½ small red onion
  • ¼ cup walnuts, chopped
