Use it as a topping for scrambled eggs, salad, grilled chicken or fish. For a complete meal, assemble this quick homemade taco seasoning and pair it with one pound meat or protein of your choice.

Salsa
- 1 pound Roma tomatoes, (3-4 medium), or garden tomatoes, diced
- 1/2 medium white onion, (1 cup chopped), or yellow onion or red onion
- 1 jalapeno pepper, seeded and finely minced (optional)
- 1/2 cup cilantro, chopped
- 2 tablespoons lime juice, from 1 lime
- 1/2 teaspoon salt, or to taste
- 1/8 teaspoon black pepper
Optional Taco Seasoning
- ½ tablespoon chili powder
- ½ tablespoon ground cumin
- ½ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon dried oregano
- 1 teaspoon pepper
Salsa Directions
- In a medium bowl, combine diced tomatoes, onion, jalapeno pepper and chopped cilantro.
- Stir in 2 tablespoons lime juice. Lightly season with 1/2 teaspoon salt and 1/8 teaspoon black pepper, or season to taste. Enjoy right away or cover and refrigerate overnight. Transfer to an airtight container and refrigerate leftovers for up to three days. Drain any excess liquid before serving if desired.
