Grilled Pesto Chicken and Tomato Kebabs

With produce season in full swing, these kebabs offer a great way to incorporate fresh veggies into your day. Tomatoes boast potassium, vitamin C, and protein. Add fresh pesto and chicken, and you’ve got yourself a great meal or snack idea!

Kebabs are super versatile, and you can add other ingredients to create exactly what you like. Mushrooms, zucchini, onions, peppers, mozzarella balls, or even marinated tofu would make great additions or substitutions. Short on time? Marinate the chicken in pesto overnight for a more intense flavor when grilling. Grab some fresh veggies and experiment with this delicious meal idea!

Ingredients

  • 1 cup fresh basil leaves, chopped
  • 1 clove garlic
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste
  • 1 ¼ pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 24 cherry tomatoes
  • 16 wooden skewers

Directions

  1. In a food processor pulse basil, garlic, parmesan cheese, salt, and pepper until smooth. Slowly add the olive oil while pulsing.
  2. Combine the raw chicken with pesto in a bowl. Marinate in the refrigerator for a few hours.
  3. Soak the wooden skewers in water at least 30 minutes (or use metal skewers).
  4. Beginning and ending with chicken, thread chicken and tomatoes onto 8 pairs of parallel skewers to make a total of 8 kebabs.
  5. Make sure the grill grates are clean. Lightly spray grates with non-stick spray. Turn the grill on medium, and heat until hot.
  6. Place the chicken on the hot grill and cook for about 3-4 minutes. Turn and continue cooking until chicken is cooked through, about 2-3 minutes more.
