Greek Salad with Lemon Mustard Dressing

It’s easy to go to the store, buy a bag of lettuce, throw in a few veggies, douse with store-bought salad dressing, and call it complete. In a pinch, this works to get a serving of vegetables on the table. But if you want to wow your family and friends, pick up a variety of fresh vegetables and lettuces. Whisk up a homemade salad dressing with natural ingredients, and create an incredible salad with a huge burst of flavor and color. The chickpeas and feta in this salad increase the protein, and olives help keep you full with heart-healthy fats. Serve with some crusty whole grain bread for a light summer meal.

Ingredients

Salad

  • 2 hearts of romaine lettuce or any variety of your favorite green lettuce
  • 1 chopped bell pepper — about 1 cup
  • 1/4 cup thinly sliced red onion
  • 1 cup cherry tomatoes, sliced in half
  • 1 cup bite-sized pieces of cucumber
  • 1 cup low-sodium chickpeas, drained and rinsed
  • 1/2 cup kalamata olives, sliced in half
  • 1/2 cup feta cheese, crumbled

Greek Salad Dressing

  • 1 clove of garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 cup fresh lemon juice
  • 1/4 cup red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. Place lettuce in a large bowl. Layer the veggies, chickpeas, olives, and feta cheese over the top.
  2. Combine all ingredients for salad dressing and slowly whisk together. Or put all ingredients into a jar with a tight-fitting lid and shake until ingredients are well mixed.
  3. When ready to eat, drizzle dressing over the top and enjoy.
