Seeking a healthy treat to offer your kids this summer? Children love popsicles and ice cream, but they’re often loaded with sugar, artificial food colorings, and unhealthy fats. Try this alternative next time the kids beg you for a treat. Fresh strawberries help provide the pretty color without artificial ingredients and offer a good source of vitamin C. The yogurt helps create the creamy texture and contains protein, calcium, and vitamin D. All are important nutrients for our little ones and for us adults too! Ingredients
- 12 ounces plain Greek yogurt (2% or 4% milk fat); could also substitute vanilla yogurt
- 2 cups fresh strawberries or other fresh berries, hulled and quartered
- ¼ cup honey or maple syrup
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon vanilla
Directions
- Combine all ingredients in the bowl of a food processor or blender and blend until combined to desired texture. The longer you blend, the smoother the consistency of the pop. Stop occasionally to scrape down the sides of the bowl as necessary. Taste and adjust sweetness if desired by adding a touch more honey or maple syrup.
- Divide the yogurt mixture evenly between reusable popsicle molds or 5-ounce disposable cups. Place a popsicle stick in the middle if using disposable cups.
- Freeze at least 4 hours before serving. Run popsicles under warm water briefly to help loosen.
