Caribbean Salad with Honey Lime Dressing

Spring and early summer offer many varieties of lettuce and greens. Butter lettuce has a buttery texture with an almost-sweet taste that works nicely in a main-dish dinner salad. It pairs well with the fruit in this dish. Adapt to include your favorite protein, and enjoy a touch of the Caribbean while keeping your summer kitchen cool as a cucumber!

Ingredients

Salad

  • 8 cups salad greens such as butter lettuce or your favorite variety
  • 2 cups fresh pineapple, cut into small cubes
  • 2 cups mandarin orange segments packed in water
  • ½ cup dried cranberries
  • ½ cup cilantro, chopped
  • 4 teaspoons sesame or chia seeds
  • 2 cups black beans chicken, shrimp or your favorite protein

Honey Lime Dressing

  • 2 tablespoon honey
  • 2 tablespoon apple cider vinegar
  • 1 tablespoon fresh lime juice
  • ¼ cup canola oil, organic and cold-pressed
  • 1 tablespoon onion, finely diced or grated
  • Pinch salt

Directions

  1. Layer salad greens, pineapple, mandarin orange segments, cranberries and cilantro between 4 plates or in a large bowl.
  2. To make the honey lime dressing, add all the ingredients to a food processor and pulse until smooth.
  3. Drizzle dressing over the salad.
  4. Sprinkle sesame or chia seeds over the top.
  5. Top with black beans or desired protein.
