Trick or treat? This dish is definitely a treat for Mom and Dad. It’s easy to prepare, with simple ingredients that are readily available at the store. It contains healthy vegetables, lean protein, and a fiber-rich grain. On top of all that, it only takes about 30 minutes to prepare. Prep it ahead of time and pop it in the oven when you get home with your goblins and ghouls after trick-or-treating. While the kids are surveying their candy haul, throw a salad together and set the table. Dinner is served.

Ingredients
- 3 tablespoons olive oil
- 1 pound chicken breast, cooked, cut into 1-inch pieces
- 1 cup raw onion, diced
- 4 garlic cloves
- 1 cup uncooked farro
- 1 teaspoon Italian seasoning
- ½ teaspoon crushed red pepper
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh oregano
- 2 large broccoli heads, chopped and steamed
- 2 ½ cups low-sodium chicken broth
- 1 ½ cups shredded cheddar cheese
Directions
- Preheat oven to 350 degrees.
- Place olive oil in sauté pan on stove top and heat until slight ripples appear in the oil.
- Add chopped onions, garlic, and farro. Cook until onions are almost translucent and farro is slightly browned.
- Add chicken broth and dried herbs and simmer on low until most of the liquid is absorbed and farro is tender.
- Add chicken, broccoli, half of the cheese, and fresh herbs in the pan and gently mix.
- Remove sauté pan from heat. Transfer mixture to a 9×13-inch pan, sprinkle remaining cheese on top of casserole, and place in preheated oven. Cook for approximately 20 minutes or until cheese is melted and bubbly.
